Boissier Paris: An Imperial Favorite

Founded in 1827, the Maison Boissier began when aspiring confiseur Béllisaire Boissier spotted a cargo train brimming with chestnuts and got the idea to glaze them, to stop them from going bad. He developed his own icing technique, opened his first boutique, and the response was instantaneous- he became a favorite of the Parisian elite, including Victor Hugo.
 
Boissier has maintained and adapted their savoir-faire throughout the years, and still sell their sweets in packages adorned with the same images as in the 19th century.
