Our February Box – My French Country Kitchen – is almost here and to get you in the mood, we are sharing one of our favorite recipes – Tarte Tatin!

This recipe is ideal for a cozy day inside and is super simple to make.

This Tarte Tatin recipe will serve around 6-8 people. You will need a good quality short or sweet pastry, around 8 apples, some butter, sugar, and a heavy duty pan that can be used over the heat and in the oven.

First, you will want to preheat your oven to 180°C (350°F). You will then want to melt 80 grams (5 tablespoons) of butter in your pan. Once the butter is melted, sprinkle 100 grams (1/2 cup) covering the butter. After the sugar is incorporated, turn off the heat.

Peel, core and halve the apples and place them into the butter and sugar mixture until you have enough to lay them overlapping. Turn on the heat to a low-medium temperature and start to caramelize the apples.
**If your heat is too high, your caramel will get dark and bitter.

Once you see your apples starting to caramelize, use two forks to turn each apple gently every few minutes until all the fruit has soaked in the caramel. Try and place the most presentable pieces at the bottom of the pan for a pretty presentation after flipping.

While the fruit is cooking, roll out the pastry to slightly overlap the edges of the pan. When the fruit is evenly cooked and the caramel is golden brown, lay the rolled-out pastry over the top of the fruit and pop it into the oven until the pastry is a beautiful golden-brown (around 35-40 minutes, depending on your oven)

After taking your pan from the oven, let it rest for about 5 minutes. Once it is rested, simply turn the tart upside down onto a shallow serving platter.

Best served warm with an optional small scoop of vanilla ice cream- enjoy!
